Lemon Mint Garlic Chicken Stew

0 First of all. in a medium bowl mix together the mint, lemon, and minced garlic. Set aside. 
2 Second, in a large pot add the 3/4 cup oil, add largely cubed potatoes and sauté them on medium-high until golden brown. Remove them and set aside. 
4 Then, in the same pot with the remaining oil in it, add your chicken of choice, season on each side with salt and black pepper.  Sear on medium high heat for about 4 minutes on each side. 
6 Moreover, add 12 cups of water to the pot of seared chicken, add the 2 small cubed potatoes. Pour in half of the lemon and mint mix we have set aside. Bring pot to a boil then on on low heat for 35-40 minutes.  Mash down the small potatoes to thicken up the broth. 
8 Finally, add in the largely cubed potatoes and the remaining mixture of mint, lemon, and garlic. Add salt and pepper to taste. Enjoy with a side of white rice!
