Smoked Cauliflower Steaks Recipe

Oven Instructions
9 Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
10 Mix the seasoning: In a small bowl, whisk together olive oil, chili powder, smoked paprika, garlic powder, parsley, and salt.
11 Prep the cauliflower: Remove the green leaves and trim the stem, keeping the core intact. Slice the cauliflower into 1-inch-thick “steaks.”
12 Season: Arrange the slices on the baking sheet and brush both sides with the seasoned oil.
13 Bake: Roast for 20–25 minutes, flipping halfway through, until golden and tender with crispy edges.
Smoker Instructions
17 Preheat your smoker to 225–250°F. Use hickory or apple wood for best flavor.
18 Prep and season the cauliflower as above.
19 Smoke the cauliflower steaks directly on a grill mat or foil-lined tray for 45–60 minutes, flipping halfway through.
20 Optional finish: For crispier edges, increase the temperature to 375°F for the last 10 minutes.
21 Serve warm, with a drizzle of olive oil or sprinkle of herbs.
